I’ve never used the trade in option before but they’re offering me decent money for my X.

Can this be done in store?

If not then am I right in thinking I could be without a phone for 14 days or so whilst they check my current phone after I send it in, before they then release the new one to me?

You could check to see what the recyclers will give you. It's usually more than Apple will offer and they'll normally give a quote valid for14 days so you can send your old phone after you've received your new one. The downside is that you have to fund the full cost of your new phone. I've had excellent results with O2Recycle.
