My mbp hard drive is full! I want to break up my iTunes music library and only transfer my movies to my external hard drive and keep the music on my mbp. Is this possible?

but I'd imagine the technique I described in this post would work in this circumstance also.
Shut iTunes.
Move the iTunes Music/Movies folder to wherever you want
Make an alias of the folder in its new location (right-click > Make Alias) and put the alias (called 'Movies' - delete the ' alias' bit off the end) in the iTunes Music folder

I did this for my iMac. I have my music on my iMac and my movies/tv shows on external hard drives. It's not hard at all. You can do what frankblundt recommends or what I did was just remove (without deleting) all the videos in my itunes library and then actually move the files over to the external HD and then re-add them in itunes. Make sure the 'copy files to itunes music library' option is not checked when you add them back in.
I do it myself. You have to go into your iTunes Library folder and drag & drop them into the other hard drive. I would create a decent naming/folder scheme if you're doing TV shows. For movies, I just have a "Movies" folder. Then delete the videos from the local drive. You can either remove the content from iTunes and then Add to Library or you can double-click each item and point it to where the file is now located.
This is very effective when using networked hard drives. Over time, you may have to do some re-moving to a larger drive as larger sizes become available. But I love it. Until someone can create about a 5TB drive for notebooks, it's the only thing I can do.

Tip: You can leave the global preference "Copy files to iTunes..." checked ans simply Optn+Drag the files into iTunes.
Optn+drag *temporarily* ignores the "copy to iTunes..." preference.
I find that easier than trying to flip the setting back and forth.

wow. I am dense. I figured out that I was having so much trouble b/c I do not have permission to "write" to my hard drive. It somehow got changed to read only. It is a LaCie G2 800 gb. I have contacted them to figure it out...
click on the drive icon on your desktop. right-click for Get Info - down the bottom, check the box next to Ignore Ownership on this volume
Mac OS X can't write to NTFS disks, only read from them.

Yes, formatting will erase all the contents of the drive. You'll have to temporarily move the files off the drive before formatting and then move them back on afterwords.
