Is it even possible to transfer songs from a mac formatted iPod Touch to my Windows machine at work. We aren't locked down on our computers at work so if I need to install something I can.

Thanks in advance

Once you plug your ipod into the pc it should come up as an external drive. Right click it, goto properties, check show hidden folders. You should be able to find it now. But i think you'll have to re-label everything.

I did not see it as a drive. Here is a screen shot of it showing up in iTunes but not in My Computer.

Any other ideas?

I've used HFSExplorer+, a freeware utility that mounts HFS+ volumes (such as a Mac-formatted iPod) to offload camera videos from my Mac-formatted nano to my Windows laptop during a recent vacation. It "sees" hidden folders and should allow you to extract your songs (in the "iPod_Control" folder) onto your Windows desktop drive.
