I have Transmission 3.00 and it was working fine, but now it starts downloading for about an hour then it just stops downloading. Does anyone know if I have to change something in the Preferences section?

Quick scan of the issues didn't show me anything.

You sure it isn't just that the torrent traffic temporarily kills your network?

I had the same issue and disappeared when enabling "Enable Micro Transport Protocol" in Transmission preferences.

In Transmission Network Preferences do you have it set to prevent sleeping?

Also check the "Transfer is stalled when inactive..." setting.

That's only for queuing transfers, though; so it's about getting more torrents going from the inactive queue.
I didn't know that.

I assumed it was for when you'd completed a download but weren't uploading, or when you only had an incomplete download and needed to wait for a new peer to complete it for you.

Doing some reading around I think Transmission is broken. Other Mac users experiencing the same issue.
Not news according to this thread which suggests Transmission is abandoned? I hope not

Unless I'm wrong, it looks like the last release was May 2020.

From the Transmission site:
@mikedld mikedld released this on 23 May 2020 · 145 commits to master since this release

One poster on that thread says he's been using the same port always. Perhaps that's the problem, maybe he needs to "Randomize port on launch"?

This is how I have my prefs set and Transmission has been working fine, even with 15+ active transfers.

NOTE: There isn't an open port shown in my screenshot because I'm not using Transmission at this moment and have UPnP disabled in my router.

Transmission is freeware that is developed by volunteers basically, so updates come when they are actually ready for prime time. It's always been rock solid here. It is not broken whatsoever for me. Been using it for years and using 3.0 now without any issues on 11.3.1. with 30 torrents. The OP should make sure his ports are open.
