Am using the Email stock app with just my Gmail account & noticed it doesn't have a designated trash option. Instead I have to select the message then MOVE then select TRASH.
However, it does have the TRASH option if using an iCloud email.
Anyone know why this is...?

Can't you just swipe to the left on the email (in the list) and select Delete that way?
 
Settings>Mail>Gmail> and then somewhere in there will be something along the lines of 'move discarded messages to' and you can change this to trash rather than 'archive them' i.e. the little storage box icon in the middle of the icons in your screenshot. If this doesn't do it, I'm at a loss. Of course, I'm at a loss why Gmail's default is to archive messages.
