I took my iPad 7th gen out of the case and noticed it was a bit bent. I tried unbending it and it was making some snapping noises. I looked and it looks fine on the outside. Can this effect internal components?

Great. It would be a hit or miss kind of thing, depending upon if stresses broke solder points, etc.
Yikes. As a 7th gen owner, your description made me cringe. Hope it continues to do the job for you.
I don't know how this got bent but now on one side the display has a darker spot or like a shadow spot. Maybe it is from pressure from the bend on the LCD panel.

The white background isn't uniform to my eyes, so no, it doesn't look "right".
But then I've no idea what yours looked like previously.
I would say that any attempt to "straighten" an iPad out carries a high risk of some level of component damage.
