I must admit, I do not like Windows 7 AT ALL. I originaly thought the new taskbar would be an improvement over the old system, but... it actually doesn't, in my experience. (Maybe that's because I didn't use the thing at all in my 1 hour of testing the RC, or perhaps because I couldn't tell at a glance what I had running and what I had docked for easy launching.)
Also, Windows Update is still a pain in the neck, as usual... though it's a LOT better than Vista was at "Configuring Updates" post install (read: 3x faster), it still offers all the language packs as available optional updates. I did not like the way this was handled in Vista, and like it even less in Windows 7. Having to right-click and choose hide update for 30+ language packs is NOT fun, especially when you get UAC prompts thrown in.
Finally... the default desktop background. Why, Microsoft? The Vista backgrounds were good-looking without being overly silly. The Windows 7 ones fail miserably in this regard.
