Can the Late 2012 Mac Mini support;-

1) 2 Monitors, from the Thunderbolt Port
2) 3 Monitors, two from Thunderbolt and, 1 from HDMI?


Planning on buying one. If I buy the base model, I can spend the rest on three monitors. IF this is not possible, I'd be as well buying the quad core/server :)

1. Yes (And these must be Thunderbolt monitors, not display port)

You could also do one display port and one HDMI.

Or two Thunderbollt and one HDMI through an Apple TV
 
No, only the 2011 Radeon mini's do 2 TB displays and one HDMI. Note that the TB displays have to be apple's. Dell has TB pass-through, but that mirrors the image.
But if you want plenty of space: get a single Dell U3014 instead of 2 Apple TBD's. If you have that on your desk, you're king of the hill. It only has 160 pixels more vertically, but it does not matter. The screen is AdobeRGB/sRGB switchable, so way more colours than an TBD, and you can even use it in 30bit colour on Windows.
