Trouble with new iPhone 6s setup

I recently got an iPhone 6s after some trouble with my iPhone 5s

I wanted to set it up as new Phone but needed to sync only messages, WhatsApp chats, Calls history and contacts

I chose iCloud backup of my 5s as I have only these on my iCloud (along with apps which even though I didn't want to restore but came as package)

I did this but the apps restore was never ending. So I chose to restore from iTunes backup of my 5s

This restored everything including picts, settings etc

I was OK to delete all 2000+ pics by hand and did so to start fresh. But I have lots of trouble with WiFi to start with.

I did reset settings but somehow this doesn't work

I want to start fresh again by restore and setup as new.
My question is the following:

1. Can I restore only selective items from backup like Messages, Whatsapp, Contacts and call history only?

I am sure this is not my problem alone. How do you guys move over to your new phone?

No, you cannot do a selective backup, or restore...
There is two ways to set up a new phone...Set up as new, or restore from iTunes or iCloud backup.

It certainly sounds like you have figured out a way to turn what should be a very simple process, into a nightmare...
