I am having issues, ever since I JB with unc0ver it never really worked. It kept crashing, Cydia and the unc0ver app. I couldn't Remove JB since app keptcrashing so I put iphoneX in DFU and updated. Now certain apps I want to use for work still recognize my phone as jailbroken because won't let me use some security features.

How do I completely remove it? I just tried to Re-update and now itunes says my firmware is not compatible

Have you restored the rootfs using the unc0ver application yet?
 
Find a signed firmware from this website: https://ipsw.me and restore it manually through iTunes. This has saved my ass many times. In your case, you have to use iOS 13.1.2. Make sure to get the right file for your iPhone model. Restoring firmware through iTunes with an ipsw firmware file is different from mac to windows, so look up a guide online for your specific platform. Also on the latest version of mac os, iTunes is gone so you have to do something different too.

Open Unc0ver and navigate to the settings tab. Enable 'Restore RootFS (rec0ver)' and "Refresh Icon Cache".Go back to the jailbreak tab and press 'Jailbreak' / 'Re-Jailbreak'.It will go through the normal jailbreak process and then show a notice saying "Will restore RootFS" then press "OK".This could take up to 15 minutes depending on your device to finish the process. Notice saying "RootFS has been successfully restored" on the window and press OK and the device will reboot. All jailbreaking related files have now be removed. You can now remove the Unc0ver app.
