Is there anyway to turn the screen off on the iMac? I don't mean any sort of screen saver or energy saver. I want to be able to turn the screen off while the iMac runs applications in the background.

System Preferences > Expose and Spaces. Click the Expose tab, and pick a hot corner to turn the display off.

Whenever the mouse pointer is put in that corner, it will do that action.

Press shift-control-eject simultaneously.

Now, if someone could find a way for the screen to STAY OFF, and not respond to keyboard/mouse/IR remote input, that would be handy.

I wish I could do something like, only wake the display when I press the space bar. Sometimes there is enough tension in my mouse cable that it moves the mouse like a millimeter and wakes the display! Sometimes I wanna use my IR remote to control iTunes while keeping the display off!

Luckily my iPod Touch with 'Remote' app lets me control iTunes without waking the display!

That's what I mean. Keep display off regardless of keyboard and mouse activity. With my MacPro I can just turn the Cinema display off. What about the iMac? Heck of an oversight. A simple on/off button for the screen would've been great.
