Turn off auto update in iTunes?

Just hacked my UK 1.1.2 iPhone and wanted to check if there is a simple way to stop iTunes from automatically looking for firmware updates and installing them?

Would it normally do this so I can avoid any potential issues with bricking on a firmware upgrade?

When a firmware upgrade does come out, you check the box that says "Do not ask me again" and then click No for the last time for 1.1.3 (When it does come out)

iTunes automatically looks for updates, it does not install them unless you click the install button.

Cheers. to clarify - if I want to go back to a legal 1.1.2 unhacked device like I had a couple of hours ago - the restore in iTunes will do that OK?
