turning my old 3g iphone into an ipod touch

I have an Iphone 3g w/ att that is jailbroken and updated to 3.0... I am considering purchasing a new iphone simply because my daughter wants one but doesn't need the data plan and is content to keep her phone and use my old one 'unactivated' as an ipod touch.

Can I do this; how? Before purchasing new one, if I backup my old one then buy new... Then use an old att sim card in old phone, in airplane mode. restoring if need be.

What do you think?

Don't want to do if won't work, upgrading isn't worth it if th old one is just a brick.

You don't really need a sim card in the old phone if you just want to use it as an iPod. Without sim card.. don't really need to be in Airplane Mode.

ok, but without a sim card can I still connect to itunes? if not i guess i could just ssh into it.

what about getting apps onto it? is it possible to copy free apps from my [future] activated iphone onto my sim-less iphone via ssh or will it only run the ipod app (or possibly built in apps?)

You need to keep your old SIM in the old phone. Then, it'll sync the same as it does now. You don't need to worry about "Airplane Mode", as it'll just show "No Signal".
