Is there a way to turn off clickable numbers in the Reminders app, either globally or one by one? Sometimes, say I am entering an invoice number for a follow up, like 43-1720065. Reminders app turns it into a link and then if I click on it, it tries to make a phone call. Right click doesn't seem to have any options to turn it off. Is there a way? Thanks!

I don't know of a way…via Terminal or otherwise. Try putting the number inside quotes as that seems to work.
It does not work for me whether I add the quotes around an existing number or type it all in new with quotes.

Try "24-12345678"

It's not becoming a hyperlink for me.

I don't know if it's because I've never gone beyond Mojave and thus have never switched over to the "new" reminders that became an option in Catalina and iOS 13.

Oh I bet that's it. Reminders was redone since then. I am on MacOS 11.2.1.
