I have a jailbroken apple tv2 running XBMC Eden 11.0, do I require any addition hardware to run tvheadend or myth tv in order to get live feeds, or can I just adjust the settings through my ssh?

Thank you in advance

Firstly I don't think tvheadend or myth tv will run on th ATV2 so you'll need a seperate computer to run which ever you choose, I use tvheadend on my Linux XBMC box, very easy to setup and worked right away with my PS3 PlayTV USB tuner.

Second you'll also need a PVR branch version of XBMC as the normal one you have installed doesn't have the TV capablilty compiled into it. So you'd need to either compile it yourself or find a ready compiled version from someone else. This thread contains lots of links to compiled PVR versions for ATV2, you'd have to install one of those instead of the one you're using now.
