1.) I know that there have been some issues with MobileMe and it always being available... which is fine, I know that services are sometimes not available so it's not really a matter of whether or not it's going to crash for me.

What I want to know, from those of you who have been using it for the past month, is if the information information that you've already 'pushed' to your phone is available during a crash. So when it's not syncing up properly will I still be able to access my contacts and calendars?

2.) How do these family packages work? Will we be able to share contacts and calendars with each other?

Does 'Back to my Mac' work across family accounts? I am the go-to guy for computer stuff and have used the feature with my entire family over a distance. Will this still work if we all have different IDs over a family account?

Yes, with one weird exception.

When MobileMe is unavailable online, you should be able to access emails, calendars and contacts on your iPhone (and also on your computer, if you've setup an email client). The information should be as current as the last successful push.

The one weird exception was the time when something happened on MobileMe that did weird stuff to some peoples contacts on their iPhone. For me, everyone's phone number disappeared. I fixed mine by turning off MobileMe sync for my contacts, waiting a few seconds, and then turning it back on. It hasn't happened since that one time (during the roll out), and it didn't appear to happen to everyone.
