Two questions: Siri and iMessage

Ok couple of questions.

My iPhone is set to UK English for Siri, but constantly transcribes 'mum' to 'mom' anyone know if there's a way to prevent that?

Secondly I can only iMessage someone on their email (iPod touch and iPad users for example) if they have a separate contact created, otherwise iMessage only let's me select their phone numbers.

Anyone got any ideas?

Yes. But the messages at only displays mobile phone numbers by default for some reason getting it to show email addresses is oddly hard.
