iPhone 3GS 16GB
Locked to o2 (will hopefully be unlocked by o2 soon, I've sent in the unlock form to o2)
Pay Monthly Contract

Well I will just need to be able to use a couple of calls, texts maybe.

If you're just going to make a few phone calls or send a few texts, you should be able to do it on your O2 sim - but check with them to be sure you have international capabilities. You'll pay international/roaming rates for the minutes/texts.
