I will be travelling to the UK soon and in the past have used an old Nokia phone and bought a pay as you go sim card when in the UK.

Will a UK pay as you go sim card work in my US iphone 3G? I assume I would have to use an O2 sim card?

i thought about it but unlocked my earlier iphone 2g and didn't really care for all the hiccups that were inherent with doing so. hmmm.

who would you recommend i use to unlock it?

My girlfriend has an unlocked iPhone 2G and there's no hiccups... it runs just like stock.

If you've updated past 3.0.1 (ie to 3.1 or later) then you won't be able to unlock and an O2 card will not work.

Don't believe anyone who tells you they'll unlock it for you.
