Is there a way to keep the brightness up as far as it will go in the dark without the watch auto dimming?
in Apple Watch app, there’s no toggle for night mode on or off that I can see.You can switch night mode off in the Watch app on your phone, if that’s what you mean?

‘So as to not disturb the people around you, but we cannot guarantee you won’t be disturbed!’It's not just an Ultra issue; I noticed the same thing on my series 9. Apple is promoting as a new feature on this years watches the ability to dim the display to as low as one nit so as to not disturb the people around you. I'm sure that all of the owls that purchase new watches will be delighted, but for us humans, they clearly went overboard.
The series 9 is definitely brighter than the Ultra 2 AOD. My partner got a Series 9 and we compared them last night.
