I am having issues pairing my M1 Pro with my iPhone. I am getting a odd error... "Pairing Unsuccessful "XXXX MacBook Pro" is not supported. It does not matter what I do - reboot pone, reboot M1 Pro. I am getting to the point of sacrificing chickens.

Any thoughts from the people smarter than me?

What are you trying to do by pairing it? In general this isn't a step you need to do.

I was thinking that I needed to pair them both together in-order to make my phone a hot spot while I am out of town. Sorry but I guess old WinPC habits got in the way. Apparently I am mistaken.

is the cellular hot spot enabled under 'cellular' in settings?
(i initially searched under 'wifi' since i'm not a hotspot user)

You don't need to pair the two in order to use the hotspot. If you connect over USB-lightning, that'll provide a connection, but if both devices are signed into iCloud you'll have a personal hotspot option available automatically without having to manually configure or connect anything.
