I've noticed I'm unable to rename any of my Apple BT devices (e.g., Trackpad, Mouse, Keyboard, etc.).

On my old white MB, I'm able to rename the same device(s) without a problem.

Anyone else noticed this?

This has been a bug since Catalina was released.

You’re lucky then:
it doesn’t seem like the problem affects every Mac but I’ve definitely experienced it with a 2018 MacBook Pro 13“ and 2 different 2012 Mac minis.

hmmm; working here on my 2019 imac and 2016 macbook. try rebooting? or removing a device, then re-connecting it... and see if that then allows you to customize the name.

I had the same bug (with 10.15.3 IIRC), tried everything and finally had to install High Sierra on a spare drive just to reset my keyboard and trackpad to defaults.

what do you mean, 'defaults'? are you saying you installed high sierra just to rename your keyboard & trackpad? just curious... and wondering what the common denominator is here; why some ppl are having this issue (& others not)...

Yes. I was about to sell them so I wanted to reset the names to something generic.

Catalina is like windows vista of old.
Sorry but I just had to say it.

History will not be Kind to this one.
Yet high Serra And Mojave are very solid..
Just saying, and I have a full drive dedicated to all 3...About to delete Catalina.

Catalina imho has just not ready for prime time, endless you just perchased a new mac, seems to me.
Lots of broken stuff on older macs.

Lots broken on brand new Macs as well. Just look at the Apple community and 400 long and 30k read thread on Catalina not working on brand new Macs. Seems at least Apple is now replacing some of these as faulty hardware. Seems things just keep getting worse here.

haha. what? lots of people hated high sierra, so... you must be wrong about that. in fact, if you go thru the mojave forum here... lots of people hate that one too.

with every OS, some people have good experiences, some have issues. and logically, some OSes have more 'teething' issues than others (catalina's move to a fully-64 bit architecture, for example).

catalina, like every apple OS before it, will continue to get better... then 10.16 will happen, and the cycle of whining will start again. SO tiresome, and wish we could focus on discussion, getting help, asking questions, providing answers.
