If I want to unenrol from my ios9 beta, I understand I have to back up the device on iTunes, before erasing it and then restoring.

Will this delete anything I have saved on my phone such as whats app messages, texts, and notes since signing up to the beta?

A restore wipes the entire device clean like it just came out of the box.

But If i was to back up the device prior to wiping it, when I restore from that back up, will it have all of my saved files since having the beta?

I understand this sounds rather stupid.

I'm not sure if you can restore a iOS 9 backup to iOS 8.4.1 unless you plan on installing the iOS 9 GM fresh.

I was planning to when it releases next week. When does the beta programme finish? I just didn't want to keep getting notifications to update to each small version.

the backup will contain the beta profile. so what I think you want to do is just remove the beta profile in settings and wait for the OTA next week

The GM that you can download right now doesn't require a beta profile. In fact it is the same version as the one that will go out next week.

As for me, I'm running 9.1 Public Beta 1.
