You can't "enable it" other than downgrading to iOS 4 or jailbreaking.

Apple chose to split up the music and videos app to be consistent with the iPod Touch and the iPad.

I don't know what sources you have but go to cydia, search, and type in Unified iPod for iOS 5. I'm running iOS 5.0.1 on my iphone 4 and it works perfectly. Only thing is you might have to go into SBSettings and hide video, or music. I forgot which one I had to hide. after that just respring and you're golden. It's super easy. While you're at it search for "iRetina++" its a theme for SBSettings. Best. Theme. Ever! Seriously, try it.
