So my iPhone is jailbroken. For several reasons I want to go back to stock firmware. Is there any way I can "unjailbreak" and keep my current App Store apps settings?

Backup>DFU mode>Restore>Restore from backup
 
Won't that also backup some of my jailbreak settings? I've had that problem before, where some jailbreak things (like the numeric battery) remain if I just restore from a backup...
