Unlock: how do i enter EDGE settings?

so, i understand that UK o2 1.1.2. and 1.1.3 iphones can now be unlocked. but once they are unlocked how do we enter the relevant apn usernames and passwords for EDGE?

at present my iphone is jailbroken and is used with an o2 pay and go sim. and someone kindly posted a replacement o2_uk.plist which includes the settings for pay and go. but if i'm travelling and want to pop in local sim cards, is there a way to enter apn setings?

I think the only way is to SSH onto the iPhone and edit the .plist file, which obviously isn't the easiest thing to do while on the move
