Any way I can change it to allow me more chances at unlocking my MBP? After the 3rd try it has me now use my PW. Is there a way to maybe change this to 5 or so?

No, on the Apple Platform Security guide it states:

there are situations where biometrics aren’t permitted. The following security-sensitive operations always require entry of a passcode or password:
  • ...
  • There were five unsuccessful biometric match attempts (though for usability, the device might offer entering a passcode or password instead of using biometrics after a smaller number of failures).

You can add more than one fingerprint in the Settings so maybe doing that, even if it's the same finger again, will make your unlocking attempts much more successful.

I do have 3 in there and this works maybe 75% of the time. As dry as it still is I see times where it is not working. My PW is not a killer to log in but humans being humans we want the easy route for sure.
