Can i plug into my mac? And sync music etc?

Im new to iphones soz.

Will it brick my phone?

Your fine.
If you restore, your phone will be locked again, so don't do that.

Do you think i should lock it back to O2 or keep it unlocked (im on O2)

I would keep it unlocked, just incase you ever need to use the phone with another sim.
