unlocked iphone updates?

I own a unlocked iPhone and have yet to update it through itunes with their automatic update that pops up when iphone is inserted. I would like to run 3.0 on the phone but am worried about updating it. Will anything happen to it, and what will "lock" the phone up again, which I do not want. Thanks for the help

It will lock the iPhone again but there is a new unlock for 3.0,
