While using my computer in various applications, iTunes voluntarily boots up.
no matter if we quit, or Force quit it continues . I do not know how to access my start up menu to see if that is the problem. i am running Yosemite

System preferences -> Users and Groups. Select your account then "Login items" tab. The Login items will only start items when you initially login into your account.

iTunes also starts when you connect an Apple device with USB and sometimes if it detects compatible devices over Wi-Fi. There used to be a separate setting to disable this in the device settings summary on iTunes. You may want to check whether any of your devices are causing this. In addition there is the possibility that websites could cause iTunes to open itself, notable when clicking on an iTunes Store link. This Safari extension should prevent the latter.
