Update 11.3 to 11.3.1

I am downloading the IPSW now. Since 11.3.1 is still being signed, is it pretty easy to just do an update on my iPhone, instead of a DFU restore and save all my data?

Can I use the update feature of iTunes, with a control or some other keypress, since 11.4 shows up if it try a straight update?

You should just be able to do the Option/Shift click to select the IPSW file for iOS 11.3.1 and upgrade without needing to do a DFU restore. If all else fails then do the whole DFU restore and reload your data from your backup in iTunes.
