Right now I'm still on IOS 8 and my older versions of apps are running perfectly... If I update to IOS 10, would it force me to update my apps to the latest version ?

No. Whether the old versions of apps function correctly on iOS 10 is another story, they're usually fine though.

Yeah, iOS 8 apps work fine, but legacy apps (iOS 6 and older era), then it won't work perfectly, but will work mostly. I still use YouTube 1.3 and It crashes every time I try to write a comment. Everything else seems to work fine though.
