iPhone update jailbroken iphone on ios6 to ios 7

i cant un-jailbreak the iphone at the first place , after i make a backup of my iphone in spite of that i am using itunes version 11.1 the first itunes support ios7 & i am running it offline with no internet connection & this the first itunes to be installed on my PC & i have the ios 7 downladed separtely but the problem is that itunes asks for internet connection after the process of holding the home button and power button together to get in a recovery mode while my iphone is connected to my pc via the usb cable and if i did as i tried before on another pc it will require an update for the itunes and download ios8 update and i dont want to update to ios8 & if i tried to make a system restore from the iphone itself it will enter an infinite loop till the battery dries out and then it will open but still the same situation

P.s:its an iphone 4s

You can't do what you're trying to do.

You can only restore your device to iOS 8. You cannot restore it to iOS 7.

other question if i backed up my jail broken iphone before update i go with the option update with apps or not cuz some of them aren't purchased just pirated copy & i know they will be gone after updating but i dont want to loose data of others apps..

No, you cant do an update on a JB device.
You will just get stuck at the Apple logo.
Make sure you create a backup first and then click restore.
That will download the latest ios version with itunes and then restore your phone to 8.1.3
Once done restoring it will ask you if you want to restore from backup.
That will put back all your contacts, settings and legit Appstore apps back to your phone.
The cracked ones obviously will not be able to install.

just for the record i should be able to update to ios 7 since ios8 is too heavy on the 4s & 4 versions of iphone , it is now slow than what it should to be , i still do the same tasks i used to do when i bought my iphone in the very beginning but in a slower way, i will never buy an iphone again...
