Does a Mac need to be running Big Sur in order to install iOS 14 on an iPhone 8?

I've got a MacBook running the most up to date version of Caralina and when I plugged my iPhone in to it to upgrade it from iOS 13 to 14, I get a warning screen that the Mac needs to be updated in order to install iOS 14 on the iPhone.

I don't want to click "ok" if it'll install big Sur on my Mac
 
But Catalina (my OS) no longer has iTunes.
iPhone is in the finder sidebar.
I'd just hate to click "update" and Big Sur ends up installed hours later.
Eventually some day I'll install BS, but it's still not quite ready for prime time.

I have no problems with Big Sur. If you see the phone in Finder you should be able to update it.
 
Using a computer to upgrade an iPhone? Why necessary? I've only ever gone to general>software update.

I totally agree with what canuckRus said about just going to settings then general and finally software update.
 
You need to install that update to access devices on iOS 14. It is not the Big Sur update.

I tried again. Clicked "update software on the Mac" and some mysterious small file downloaded and installed - then I could go ahead and update the iPhone. It didn't install Big Sur. The longer use Apple products, (going on 25 years now) the more paranoid I get about installing new software.

I can empathize you hesitancy. iTunes has been user funky and messed up my music collection.

A few months ago I upgraded my iPhone 6s+ to iOS 14 on a 2008 MacBook Pro running Mojave (via dosdude's Mojave patcher). Went fine.

Updating a jailbroken phone from the phone itself has a history of messing things up - if you even have access to that on some jailbreaks.
