Basicllly got my unlocked/jailbroken iphone, done both about last may i'd say.
Think its about time to update to 3.0 of some sort :)

How exactly should i go about this? (update via itunes, then blackrain or another program , redsnow maybe? , then unlock somehow?)

Did a bit of searching/etc...didnt figure out what im looking for..conflicting information and all.

You should update to 3.0 firmware first (not 3.1.2) and then use PwnageTool to upgrade to 3.1.2 while preserving the 04.26.08 baseband. Then unlock with ultrasn0w.

If you don't have a Mac, jailbreak your iPhone at 3.0 using redsn0w 0.8 (not 0.9) then obtain a custom firmware from a trusted source online and upgrade to that. You have to jailbreak at 3.0 first to break the chain-of-trust so that you can upgrade to the custom firmware. Then unlock with ultrasn0w.

I strongly recommend against upgrading to 3.1.2 official. That will update your baseband and will mean that you will have to use the blacksn0w unlock. That has many known issues and should be avoided if at all possible.

I'm not too worried about being the newest firmware, 3.0 seems like it'd be fine for me (only really want to be able to download app store apps again..most require 3.0 nowadays)
Should i just stick with 3.0 if im happy with that?

That's entirely up to you. There are some new apps that require some of the new frameworks in 3.1, but most will work with 3.0. 3.0 is a fine OS, and it would save you troubling with PwnageTool: you would just jailbreak with redsn0w 0.8.

If you later decide you want 3.1.2, you can always upgrade to a pwned 3.1.2 firmware at any time.
 
just a question about unlocks...sorry if im hijacking your thread, but if the answer is yes then this is helpful to you. since factory unlocked iphones had to go through a carrier update...couldnt that carrier update be uploaded to the internet...then someone downloads it and imports it into itunes and factory unlocks their iphone? i hope this is so...then i could be rich selling factory unlocked iphones lol.

Carrier unlock codes are phone-specific and not algorithmic. There is no way to duplicate a factory unlock without having access to the records of your phone on Apple's servers.
