Hi, could anyone help me out with this. I'm trying to upgrade my Jailbroken 2.0.2 iPhone 3G to Jailbreak 2.1 all without losing any of my apps, data, pictures and etc... How can I go about doing this? Do I just backup in iTunes then install the JB 2.1? Any help would be appreciated.

I assume by "Apps" you mean Apple applications and not Cydia or Installer apps. Yes, just backup your iPhone, upgrade, re-Jailbreak and restore from backup. You should be good to go!
 
Ok, I did this. All went smooth until I tried to restore from backup. I restored from my backup I made then it restarts and is frozen on the apple logo screen and vibrates about every 10 seconds.

That happened to me also when I tried to restore a previous jailbroken backup. The only way around it for me was to grab a backup that wasn't jailbroken and use one from before I JB my phone :(

Or set it up as a new phone and sync to restore your contacts and music/video. The only thing you lose with this is your Text messages, your photos, and your settings.
