Should I always do it via my mac/pc and always set up as new phone to makes sure there is no bugs? or just restore from backup

Or even do it over WIFI which I never have done but that is a personal thing to me as ive had bad experiences with that since the old 3G days

Any of the options work. Some like one way over another way, but any of them should work fine. If you run into some issues then there are some troubleshooting steps that might involve restoring from a backup or as new.
 
Exactly. Everyone has done it every way and it's been trouble free every way and problematic every way.

Personally I've only backed up and set up via iCloud backups using wifi and the process has worked flawlessly for me every time. I have never backed up to a Mac or PC nor restored from one. I had super reliable, fast (50/50) and stable FIOS wifi every time I did it. Don't know what the implications would be if the Internet connection was sketchy.
 
Apple think that over the air updates are reliable enough, I don’t know why we think we know better on here.

People only post on here when it went wrong, which is a tiny number vs those that were successful.

As for restoring from backup - I’ve upgraded to X without restoring a backup. Not because I think it’s more reliable, but I’d not done it for 5 years and so I had loads of apps etc I never need. It was a good cleanup exercise.
