Upgrade Issue

I currently have an iMac 2007 and want to fully clone my current hard drive over to the soon to be released 2016 iMac, but, the 2016 iMac won't likely support OS X 10.11 and the 2007 won't support the 10.12 version. Will migrating a clone over to a macbook that can support Sierra, upgrade to Sierra, then migrate to the 2016 iMac work?

Is there a reason you can't simply use Migration Assistant?

I'm stuck having to use FileVault 1, and I think that requires a disk clone to keep. Am I right? Can't do full disk encryption because it will not fully boot with that.
