I currently have a 7G iPod Classic and I was wondering about its future. Yes it works, but it needs to be upgraded. There are three options I am examining.

1) Send it to a third party to replace the HDD with a SSD/CF. (eBay has a couple of those)
2) Open and replace HDD with SSD/CF myself.
3) Get a new iPod Touch (128GB) or get an iPhone 6/6+ (128GB).

Any advice would be appreciated.
 
I would advise you to do the procedure yourself, its not that hard to do.

You can put in any msata drive from the ones named on the site (up to 1tb), since you own a 7g classic it is possible to use a drive larger than 128gb with your ipod. Another possibility is to rockbox the ipod.

Not completely true. If it was a thin 160GB 7th gen Classic; then you could go higher than 128GB without the use of Rockbox.
 
And it's not that hard until you break a tab or slice a cable. Also you need to worry about power consumption when using mSata drives.

As said in my response to the OP's question, the linked website bears most info needed to convert your ipod to SSD. Furthermore I stated rockbox as an option as is not needed on the 7g ipod!
As for breaking a cable when doing the repair, it can happen to anyone, if you follow instructions correctly everything should be hunky dory.
 
Is it possible for me to replace the Cirrus Logic DAC to a Wolfson DAC myself, or do I need a professional to do that?
If you're not super sold on the 7G, you could always get an old 5G off of ebay and use its Wolfson DAC. Personally, I've found that the iPod 3G (touch wheel) sounds best, when using upgraded capacitors and a 20Hz HPF. (I do stuff at Retro Sonic Fidelity).
