Hello

I have a Mac Pro 5.1 mid 2010
with

NVIDIA GeForce GTX 680 2048 MB
2 x 3,46 GHz 6-Core Intel Xeon

it has a "Generic AHCI Controller" (whatever that is) and the system runs on a 1TB SSD drive.

Also, I can connect USB3 drives via an expansion slot.

At the moment I have High Sierra running and use it for Pro Tools, but I'd like to improve it for DaVinci Resolve. Can I somehow upgrade to Mojave? How can I improve the performance for Davinci Resolve (I can use 16.1.2 on High Sierra)?

Looking forward for tipps

Yes you can - see MP5,1: What you have to do to upgrade to Mojave for detailed instructions on how to upgrade to Mojave.
