Heres the deal. I have a late 2011 MacBook Pro 15 with 2.4 Core i7, 8gb ram and a 750gb hdd. I mostly edit photos, and some brief video, mostly 2.7k, some 4k, but the macbook struggles with the 4k. I have the option to trade it for a 10.5 iPad Pro with logitech keyboard cover and apple pencil. I would have to put 400 Cash up for the deal. What are your thoughts on this? Is it worth the upgrade? Or should I put 16gb Ram and an SSD Drive in the macbook?

Can you upgrade the Ram to 16GB (8GBx2)? Always max out the RAM especially if you are editing videos and photos. Also maybe move the photos to an external drive. If you get the iPad it really depends on what software you will use too. Which brushes and adjustments you use. I'm still playing with the photo apps on the iPad. My preference is to edit on my MBP and maybe start editing a bit on my iPad. If you could check it out in store and see which you like best?
 
You should have a thorough 30min of editing on the Pro in store to get a feel for how different/better/worse it is. Don't forget to ask a photo editing genius to give you a tutorial and answer questions you might have.
 
I'd for the iPad personally. Future of computing and you can handle photo editing and light video just fine. Test it out to see how you like it or return if you prefer the desktop paradigm.
