howdy, I'm getting the Quad...programs I mostly use:

Pro Tools 002
Logic Pro 7
Final Cut Pro
Photoshop
Dreamweaver
Carrara 3D (Basic)

should I consider upgrading to the 7800GT? what difference should I expect over the stock 6600?

Yes, you should. The card is much faster. However, the leadtime on the card is 6 to 8 weeks.

I'm getting my Quad with the stock 6600 and I will order the 7800 sometime later.

I agree about the cars. I am doing the exact same thing, I will upgrade the card later once I receive my Quad. If you can wait 6-8 weeks, I would order it, but if not, you can always upgrade later.

using the programs i use...what kind of real world difference am i going to notice with the 7800 over the 6600? in what areas specifically?

You dont need the 7800GT, leave that money and buy more RAM or another HD. Get the 6600 standard not the LE and you willl be fine.

I dont see you needing more power unless you are devoted to games or doing intensive 3d work or compositing for ultra high rez (HD or 2K)
