I've got a factory unlocked, jailbroken iPhone 4S on 5.0.1. I'm on a Mac running Lion, and my iTunes version is 10.7.

I tried to get to 5.1.1 by doing the following:

1. Tried doing a straight 'restore' of the 5.1.1 IPSW (9B206); iTunes didn't allow me to do this, failed with an error 21, and my iPhone got suck in DFU mode.

2. I read about the above error, etc, and folks were talking about how Apple no longer 'signs' 5.1.1, so I used Tiny umbrella v6.00.01 to do a restore by starting the server (my shsh blobs for 5.0.1, 5.1 and 5.0.1 had been previously saved). iTunes didn't like that either and wouldn't allow me to restore 5.1.1. (update: I noticed later that in Advanced settings, I had the 'Request SHSH from Cydia' enabled -- there was a warning indicating that this was no longer a suggested setting, but I am reluctant to retry).

3. Used RedSn0w to stich together the 5.1.1 IPSW and the 5.1.1 SHSH Blob, however again iTunes did not like that, and the restore failed.

4. in iTunes, I selected the 5.0.1 IPSW and somehow managed to get out of DFU and my iPhone restarted (sigh of relief).

I'm back to where I started, which is a good thing, but I'd really like to know if this is possible to get to 5.1.1 (also Jailbroken), and what steps I should use?

redsn0w 09.15b2 seems to like my SHSH blobs for 5.1.1 (see attached screen shot)

i am not doing anyting OTA but I notice from the instructions you provided, that the stitched IPSW is being applied to the iPhone by redsn0w. In my steps, I tried to do a Restore from iTunes (see #3 above) of the stitched IPSW, and that failed immediately. Maybe that's the key?

Use the restore feature in Redsn0w.(Extras > Even More > Restore)
 
Retried using Extras > Even More > Restore (followed the instructions). My phone rebooted as was indicated by redsn0w, but very soon after I got an error message by redsn0w saying (not a cut & paste of the error but something very much like 'Could not restore. Invalid RamDisk.')

Ideas? Not meant to be? ;)
 
rebooted or is put into recovery mode? be precise in which steps you take and what the exactly is the error
 
I belive the message from redsn0w was that the iPhone was being put in recovery mode. The error was very close to what I have stated above (i.e. invalid ramdisk). From the instructions you provided earlier, i got to Step 9 where it failed on 'RedSn0w will now restore your device'.

The firmware on your 4S is likely factory fresh or from OTA.
Therefore not only can you not re-restore to 5.0.1, but you could not advance to 5.1.1

You must have arrived at your current firmware via an iTunes restore.
 
I Jailbroke this iPhone 4S soon after I got it, it may well have had 5.0.1 installed but I can't say for certain. Never used OTA,

So if what you say is correct, then my options are to stay put on 5.0.1, or upgrade to 6?
