Upgrading CPU on 6,1 Mac Pro

I'm thinking about buying and then upgrading a 6,1 Mac Pro CPU.
I've built a ton of PC back in the day and also did a few 5,1 to hex cores. Is the 6,1 much harder ? Should I buy a quad core with a d500 or 6 core with a d300 and then upgrade. I've found 8 core processors on eBay for around 350-400

I don't do video editing so not sure if the d500 would work out better or not. I'm. Using refurbished and the price is a couple hundred difference between 6 core with d300 vs quad with d500.

Two things to keep in mind:
  • The CPU is very easy to upgrade
  • The GPUs are difficult to upgrade because they are very rare on the market and command very high prices when they are available
So given a choice, I would buy the model that includes the better GPU and then upgrade the CPU if needed.

Agree with ActionableMango. Try to find a D700 GPU on a quad core and then upgrade the CPU.

I have done CPU upgrade lots of time for me and my friends and it's not too long and not too difficult process.
 
I mainly do audio , my wife has a canon t5i for videos and stuff but herm.. main reason I want the Mac Pro is the quiet fan! plus I can attach my thunderbay and thunderbolt dock to it , replacing my 2015 MacBook pro which the fan is crazy loud. I could wait for a imac Pro but your looking to spend over 5k, and I am willing to bet the fan won't be a quiet as the pros.
 
I do 3D rendering, video editing with fcpx and davinci and I never heard my macpro fan. Never. It's an incredible machine and I love it.
