Getting an iMac Pro to replace my 2008 Mac Pro, which has 6 internal drives.....4 HDs and 2 SSDs. I'm guessing that I would just get some enclosures to connect them to the iMac Pro, but I'd also like to make sure I can boot into the old OS (El Cap) on one of the SSDs if needed. One 1TB HD is set up as a Time Capsule, one 1TB HD has home movies, and one 500gb SSD is set up as a dual boot with El Cap/Win 7. Or maybe I can combine them all 6 into one large external drive? Not exactly sure of the processes involved so any advice would get great!

TIA!

A new iMac Pro will boot from Mojave OS X.14. Don't know if the drivers etc would be available under El Capitan or Windows 7.

That’s fine....I will slowly update to using Mojave only. But I still can create bootable external drives with El Cap, no?

UPDATE: I just did some research....guess I can’t create a bootable El Cap drive for an iMac Pro.
