iPod upgrading ipod hard drive need help

I don't know what else to do in losing my mind. I've already bought 3 iPods thinking out was the iPods fault. I bought tarkans msata adapter, and the Samsung evo 800 500 GB hardrive which was confirmed to work. I started with a 5.5 gen iPod. It worked but everytime I sync it something went wrong. It would end up corrupted or just be at the disc menu when it was done. Mind you I have a 6th gen iPod that had all the same music on it is just full. So I thought I'll get a 7th gen and try that. Same thing. I followed the installation instructions to a t. And I even synch only 100 GB at a time. As of right now the 7th gen I just got of only going to the apple screen. I can get it to the diagnostics mode, but it won't go to disk mode. Is this normal are they incredibly hard to deal with after changing the drive? Is there something different I would do when synching compared to my old iPod? I would ad that I do restore it after there's an issue everything and did restore it after first installation.
