My servers are web, mail and DNS servers. As such I never upgraded past 10.12 Sierra Server as the Server option in later versions doesn't include these options.

My question is what happens to your Apache, Dovecot and BIND set ups when you go past Sierra? Are they removed, or just no longer administerable via the GUI? And are there thrid party GUIs to replace this functionality?

Apache is still there, BIND is not and needs to be compiled. I don't know about Dovecot; I don't run a mail server.
