I'm getting new phone and watch.... to replace my old phone and watch. So is there a correct order to do the upgrades?

1) Pair new watch to old phone; then upgrade phone?
or
2) Upgrade phone, then pair new watch to new phone?
or
3) doesn't matter
 
I ordered both at the same time - will be picking them up at the same time - just not sure what order to do things when I get home
 
If you’re restoring from backup. Backup your phone with iTunes or iCloud. Unpair watch from phone (this will delete watch data and create a backup.)

Then when you get the new phone/watch. Restore phone from backup. Next pair new watch with new phone, restore watch from backup. Done

If you use iTunes & you want passwords & activity data to be saved you must use an iTunes encryption on the backup. iCloud encrypts automatically.
