hello,

I know the mac pro 7,1 8-core supports 2666mhz ram, what would happen if I upgrade the ram to 2933mhz, would it not run or would it simply run the 2933mhz ram in 2666mhz speed?

All Mac Pro models with 8 core processors operate memory at 2666MHz.
If you upgrade the ram with 2933mhz, the ram will run at 2666mhz without any issues (All the memory included with your Mac Pro is 2933MHz).

Just FYI, despite running at 2666MHz, my 8-core machine actually shipped with the 2933MHz memory. I think they just use the faster stuff in all the boxes for cost reasons, the iFixIt teardown showed the same thing. It will make things easier if I ever upgrade the CPU :)
 
That's what's stated on Apple's site. It's all 2933MHz, runs at 2666MHz in the 8-core.
