When I hold my phone in such a way to use the volume button as the shutter button while taking pictures, the photos show up upside down on my PC via the photostream.

Any idea on how to fix this?

Turn the camera around ;)

flip them around on the pc i guess

Windows does not support the universal standard metadata tags that iOS sets.

Any other photo app will. Open in Irfanview, paint.net, photoshop, pretty much anything non-Microsoft and they will have correct orientation.
